Pork and Apple Crunch Balls
450 g pork mince
Peel and finely dice the apple and leek. In a bowl combine the mince, 1 egg, half of the breadcrumbs along with the apple and leek.
Shape the mixture into 8-10 meatballs.
Gently beat the second egg into a small container and place the
rest of the breadcrumbs onto a plate.
Place on baking tray for 15-18 minutes or until cooked through.
Serve with a crunchy salad, baked potato and a zingy salsa or chutney.
Watties No Fuss Apple Tart
250 g very soft butter (but not melted)
Preheat oven to 400°F. Grease a 12 cup muffin tin.
In a mixing bowl, lightly beat eggs. Add milk and oil, stirring
until just blended.
Gently fold in the apples. Spoon batter into the muffin tin, dividing
evenly among the cups. Bake in a preheated oven for 15-20 minutes
or until a toothpick inserted comes out clean...
